Spring rolls

Blistered, crackly wrappers from frozen or fresh, with none of the deep-frying.

Spring roll wrappers are engineered to be fried, so they need oil to blister. A brush rather than a spray gives more control and stops the thin pastry drying out at the edges.

Ingredients

Serves 4 · tap to check off

  • 12 spring rolls, fresh or frozen
  • 1 tbsp neutral oil, for brushing
  • Sweet chilli sauce, to serve

Method

  1. Brush. Brush each roll lightly all over with oil, paying attention to the seams.
  2. Space. Lay them out in a single layer with a gap between each. They stick if they touch.
  3. Air fry. Cook at 390°F for 10 minutes, turning once, until blistered and golden.
  4. Serve. Rest 2 minutes so the filling stops being molten, then serve with sauce.
Test-kitchen tip

Cook frozen spring rolls straight from the freezer. Thawed ones go soggy and split at the seams.
