Charred, nutty florets in ten minutes, a world away from anything steamed.
Broccoli is mostly water, so it needs dry heat and space. Crowd the basket and it steams itself grey. Give it room and the tips char and turn nutty.

- 1 large head broccoli, cut into florets
- 1.5 tbsp olive oil
- 2 garlic cloves, sliced
- Salt, chilli flakes and lemon to finish
Method
- Cut. Break into even florets so they finish at the same time.
- Coat. Toss with the oil and salt, making sure the tips are covered.
- Air fry. Cook at 390°F for 10 minutes, adding the garlic for the last 3 so it does not burn.
- Finish. Squeeze over lemon and scatter chilli flakes.
Test-kitchen tip
Add sliced garlic only in the last few minutes. Ten minutes at 390°F turns it bitter and black.
