The one hazard is the top tortilla lifting off in the fan and flapping about. A rack, or a couple of cocktail sticks, holds it down until the cheese sets.

- 4 tortillas
- 150g grated cheese
- 1 pepper, finely sliced
- Spring onions and jalapenos
- Soured cream and salsa to serve
Method
- Fill. Scatter cheese and fillings over two tortillas and top with the others.
- Secure. Pin each with cocktail sticks or weigh down with a rack so the fan cannot lift the top.
- Air fry. Cook at 375°F for 8 minutes, turning once, until golden and crisp.
- Cut. Rest 1 minute, then cut into wedges.
Test-kitchen tip
Always pin the top tortilla down. Without it the fan whips it off and you get a cheese fire.
