Air fryer chicken drumsticks

Crisp skin, sticky glaze, and the glaze goes on at the end so it never burns.

Sugary glazes and long cooks do not mix. Cook the drumsticks naked first, then glaze for the last few minutes so it caramelises instead of turning to carbon.

Ingredients

Serves 4 · tap to check off

  • 8 chicken drumsticks
  • 1 tbsp oil, salt and pepper
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp smoked paprika

Method

  1. Season. Pat the drumsticks dry, then rub with the oil, salt and pepper.
  2. Air fry. Cook at 390°F for 18 minutes, turning once.
  3. Glaze. Mix the honey, soy and paprika, brush over, then cook 4 minutes more.
  4. Rest. Rest 3 minutes so the glaze sets rather than running off.
Test-kitchen tip

Never glaze at the start. Honey burns long before chicken on the bone is cooked through.
