Sweet, sticky, caramelised carrots with none of the tray-roasting time.
Honey burns long before carrots soften, so it goes on at the end. Cook them naked first, glaze last, and you get sticky rather than scorched.

- 600g carrots, halved lengthways
- 1 tbsp olive oil
- 1 tbsp honey
- 1 tsp thyme leaves
- Salt and pepper
Method
- Cut. Halve the carrots lengthways so they have a flat side.
- Air fry. Toss with the oil and cook at 390°F for 14 minutes.
- Glaze. Add the honey and thyme, then cook 4 minutes more.
- Serve. Season and serve hot.
Test-kitchen tip
Honey at the start will be black by minute ten. Always glaze in the last few minutes.
