Caramelised, crispy-edged sprouts that convert people who think they hate sprouts.

Boiled sprouts are the reason for the bad reputation. Halved and blasted with dry heat, the cut face caramelises and the outer leaves go crisp like crisps.

Ingredients

  • 500g brussels sprouts, halved
  • 1.5 tbsp olive oil
  • Salt and black pepper
  • 1 tbsp balsamic vinegar, to finish

Method

  1. Prep. Trim and halve the sprouts, keeping any leaves that fall off.
  2. Coat. Toss with the oil, salt and pepper until glossy.
  3. Air fry. Cook cut-side down at 390°F for 14 minutes, shaking once.
  4. Finish. Splash with balsamic while hot and serve.
Test-kitchen tip

Start them cut-side down. That flat face against the basket is where the caramelisation happens.
