Mushrooms are mostly water. In a pan they sit in it and boil; in an air fryer the moving air carries it away, so they brown instead.

- 500g button or chestnut mushrooms, halved
- 2 tbsp butter, melted
- 3 garlic cloves, crushed
- Parsley, chopped
- Salt and black pepper
Method
- Prep. Wipe the mushrooms clean rather than washing them. Halve any large ones.
- Coat. Toss with the melted butter.
- Air fry. Cook at 390°F for 12 minutes, shaking twice, adding the garlic for the last 3.
- Finish. Toss with parsley, salt and pepper.
Test-kitchen tip
Never wash mushrooms under the tap. They soak it up and you will spend the whole cook boiling it back off.
