Blistered, sweet corn with charred kernels, and no giant pan of boiling water.
Boiling waters down the flavour. Dry heat concentrates the sugars instead and gives you the blistered spots that make corn taste of summer.

Ingredients
Serves 4 · tap to check off
- 4 corn cobs, husks removed
- 1 tbsp melted butter, plus more to serve
- Salt
- Chilli powder and lime, optional
Method
- Brush. Brush the cobs all over with the melted butter and season with salt.
- Air fry. Cook at 390°F for 12 minutes, turning twice, until blistered in patches.
- Butter. Roll in more butter the second they come out.
- Finish. Dust with chilli and squeeze over lime if you like.
Test-kitchen tip
Snap the cobs in half if they do not fit. Wedging them in stops the air circulating and they cook unevenly.
