Air fryer steak

A proper crust and a pink middle, no smoke alarm and no cast-iron pan.

The air fryer cannot sear like a screaming hot pan, but it gets closer than you would think if the steak is bone dry and at room temperature. A rest at the end does as much work as the cooking.

Ingredients

Serves 2 · tap to check off

  • 2 sirloin steaks, about 2.5cm thick
  • 1 tsp neutral oil
  • Flaky salt and coarse black pepper
  • 1 knob butter, to finish

Method

  1. Temper. Take the steaks out of the fridge 30 minutes ahead and pat them completely dry.
  2. Season. Rub with the oil, then season heavily on both sides.
  3. Air fry. Cook at 400°F for 10 minutes for medium-rare, turning once.
  4. Rest. Rest 5 minutes with a knob of butter on top before slicing across the grain.
Test-kitchen tip

Cook to temperature, not time: 130°F for medium-rare. Thickness varies far more than recipes admit.
