Pale, limp air fryer food nearly always comes down to moisture. Browning cannot begin until the surface of the food is dry, so anything keeping it wet, whether that is water, crowding or a cold basket, delays the only reaction you actually want.

Cause 1: too much in the basket
The fix people least want to hear. An air fryer crisps by moving hot air around every surface of every piece. Cover the basket floor twice and the pieces in the middle are surrounded by other food rather than air, so they release steam and sit in it.
One layer, with a gap between pieces. If you cannot see basket between the chips, there are too many chips. Two rounds of ten minutes beats one round of twenty every time, and the first batch reheats in ninety seconds while the second cooks.

The gap test. Look down into the basket before you close it. If you can see the bottom between the pieces, you are fine. If it looks like a full plate, take half out.
Cause 2: wet food
Water boils at 100C. Until every drop on the surface has turned to steam, the food cannot climb past that temperature, and browning does not begin until around 140C. A wet chip spends the first eight minutes of its cook just drying off.
Pat everything dry with a tea towel or kitchen paper. It matters most with washed potatoes, marinated meat, tinned chickpeas, and tofu, which needs pressing rather than patting.
For chips, soaking then drying is the whole trick. Soaking pulls out surface starch, and drying afterwards means the heat goes straight into browning. Our chips recipe walks through it.
Cause 3: no oil at all
Air fryers get sold on cooking without oil, and you can, but the result is paler and drier. Oil conducts heat into the surface of the food far better than air does, and it carries the compounds that give browning its flavour.
Half a teaspoon per portion, tossed through properly so everything gets a thin film, is all it takes. A spray bottle beats supermarket aerosols, which contain additives that gum up baskets over time.
Cause 4: no preheat
Food dropped into a cold basket sits in slowly warming air for three or four minutes, releasing steam the whole time. By the time the machine reaches temperature the surface is wet and the clock has eaten a fifth of your cook.
Three minutes at your target temperature. The difference on sweet potato fries is immediately visible.
Cause 5: temperature too low
Browning reactions need heat, and they effectively stall below about 160C. Cooking chips at 170C to be careful gets you cooked but pale potato. Most crisping wants 190C to 200C.

Cause 6: no shake
Pieces touching the hot basket brown fastest, and pieces in the middle of a pile barely brown at all. Shaking swaps them. Skip it and you get a mixture of burnt and pale in the same batch.
Once at halfway is the minimum. For a full basket of chips, twice is better. Steaks and fish fillets get turned once instead.
Cause 7: blocked airflow
The crisper plate lifts food off the drawer floor so air can reach underneath. Cook without it, or line the plate with a solid sheet of foil, and the bottom of your food sits in its own steam.

Cause 8: the machine itself
Sometimes it really is the air fryer. Fan strength varies a lot more between air fryers than between ovens, and a weak fan cannot dry a surface fast enough to brown it whatever you do. Evenness is the trait we measure most carefully, and the method is in how we test air fryers.

The order to fix things
- Halve what is in the basket. Fixes it outright most of the time.
- Dry the food properly. Costs thirty seconds.
- Add half a teaspoon of oil and toss it through.
- Preheat three minutes.
- Raise the temperature to 200C and shorten the time.
- Shake at halfway, twice for a full basket.
- Check the crisper plate is in and the holes are clear.
- Clean the element and fan guard. Then blame the machine.
