- 4 large potatoes, peeled and coarsely grated
- 1 small onion, grated
- 1 egg
- 2 tbsp cornflour
- Salt, pepper and oil spray
Method
- Squeeze. Wring the grated potato and onion in a clean tea towel until no more water comes out.
- Bind. Mix with the egg, cornflour and seasoning, then press into 8 patties.
- Chill. Chill 10 minutes so they hold their shape.
- Air fry. Mist with oil and cook at 390°F for 16 minutes, turning once.
Test-kitchen tip
Squeeze the potato far harder than feels necessary. That water is the only thing standing between you and a crunchy hash brown.
