Hash browns

Golden, crunchy hash browns that hold together instead of falling apart in the basket.

Wringing the water out of grated potato is the entire recipe. Squeeze until you think you are done, then squeeze again. Wet potato steams and collapses.

Ingredients

Serves 4 · tap to check off

  • 4 large potatoes, peeled and coarsely grated
  • 1 small onion, grated
  • 1 egg
  • 2 tbsp cornflour
  • Salt, pepper and oil spray

Method

  1. Squeeze. Wring the grated potato and onion in a clean tea towel until no more water comes out.
  2. Bind. Mix with the egg, cornflour and seasoning, then press into 8 patties.
  3. Chill. Chill 10 minutes so they hold their shape.
  4. Air fry. Mist with oil and cook at 390°F for 16 minutes, turning once.

Squeeze the potato far harder than feels necessary. That water is the only thing standing between you and a crunchy hash brown.
