Smoke from an air fryer is nearly always fat meeting something hotter than fat should meet. Working out which fat, and where, tells you the fix in about a minute.

Stop and unplug if you smell burning plastic or electrics, or see black smoke. Everything else on this page is a cooking problem you can fix. That one is a fault, and it needs the manufacturer rather than a cleaning cloth.

Cause 1: grease on the element

The most common cause by a distance. An air fryer fan atomises fat and sprays it upward, so the heating element above your food collects a film of grease that never gets washed during a normal clean. Next time the element glows, that film burns.

Unplug the machine, let it cool, then turn it upside down so you can see the element. Wipe it with a damp cloth. For carbonised deposits use a paste of bicarbonate of soda and water on a soft cloth, then let it dry fully before plugging in.

Cause 2: fat pooling in the drawer

Cooking bacon, burgers or wings renders a lot of fat. That fat drips through the crisper plate and collects in the drawer, where the airflow keeps it hot enough to smoke.

Pour two tablespoons of water into the drawer, underneath the crisper plate. The water keeps the pooled fat below its smoke point without touching your food or affecting the crisp. Nothing else changes. It is the single most useful trick in air frying.

For very fatty food, pause halfway and pour the fat off as well.

Cause 3: the wrong oil

Every oil has a smoke point, and an air fryer at 200C will exceed several of them. Olive oil is the usual culprit, since extra virgin starts smoking around 190C.

Using too much oil causes smoke on its own, whatever the type. Half a teaspoon per portion is plenty, and the excess just pools in the drawer.

Cause 4: a brand new machine

Light smoke and a sharp chemical smell on the first two or three uses is manufacturing residue burning off, not a fault. Run the machine empty at 200C for ten minutes with a window open and it clears. Our air fryer plastic smell guide covers the smell side in detail.

Cause 5: loose liners and stray food

A paper liner with nothing on top of it will lift into the element and catch fire within seconds. Never preheat with an empty liner in the basket, and never use one larger than the basket floor.

Small bits of food left from a previous cook do the same on a smaller scale. Crumbs sitting on the element burn every time it heats. Air fryer ovens have a crumb tray for exactly this reason, and it needs emptying.
