Onion rings

Crunchy battered rings that hold their coating instead of sliding off in one bite.

The classic failure is the onion sliding out of its shell. A dusting of flour on the bare onion first gives the batter something to grip, so the coating stays put.

Ingredients

Serves 4 · tap to check off

  • 2 large onions, cut into 1.5cm rings
  • 80g plain flour, plus extra for dusting
  • 1 egg, beaten with 100ml milk
  • 80g panko breadcrumbs
  • Oil spray, salt

Method

  1. Dust. Separate the rings and toss in plain flour so the batter has something to cling to.
  2. Batter. Dip in the egg and milk, then press into the panko.
  3. Spray. Mist generously with oil on both sides.
  4. Air fry. Cook at 390°F for 12 minutes, turning once, in a single layer.
Test-kitchen tip

Dust the naked onion with flour first. That thin layer is what stops the coating sliding off.
