Air fryer samosas

Samosas

Blistered, flaky pastry from frozen or fresh, no pan of oil in sight.

Samosa pastry is laminated and dry, so it needs a brush of oil to blister rather than go papery. Do the edges as well as the flat faces.

Ingredients

Serves 4 · tap to check off

  • 12 samosas, fresh or frozen
  • 1 tbsp neutral oil
  • Mango chutney and mint yoghurt to serve

Method

  1. Brush. Brush each samosa all over with oil, corners included.
  2. Space. Lay out in a single layer with gaps between.
  3. Air fry. Cook at 375°F for 12 minutes, turning once, until deep gold.
  4. Rest. Rest 2 minutes before eating, the filling is molten.
Test-kitchen tip

Cook from frozen. Defrosted samosas go limp and the pastry tears when you brush it.
