Fudgy middle, papery top, in a small tin without heating the whole oven.

Brownies are all about underbaking. In an air fryer the top sets fast while the middle stays molten, which is exactly what you want.

Ingredients

Serves 6 · tap to check off

  • 120g butter
  • 150g dark chocolate
  • 150g caster sugar
  • 2 eggs
  • 80g plain flour and 2 tbsp cocoa

Method

  1. Melt. Melt the butter and chocolate together and cool slightly.
  2. Whisk. Whisk in the sugar, then the eggs, until glossy.
  3. Fold. Fold in the flour and cocoa and pour into a lined tin that fits your basket.
  4. Air fry. Cook at 320°F for 20 minutes. A skewer should come out with moist crumbs.
Test-kitchen tip

A clean skewer means you have gone too far. Pull them when it comes out with damp crumbs clinging on.
