Ridged, cinnamon-sugared churros with a custardy middle, no vat of hot oil required.
The ridges are not decoration. They add surface area, which is where the crunch comes from, so use a proper star nozzle rather than a plain round one.

Ingredients

- 250ml water
- 60g butter
- 140g plain flour
- 2 eggs
- 50g caster sugar mixed with 1 tsp cinnamon
Method
- Make the dough. Boil the water and butter, beat in the flour off the heat until it forms a smooth ball, then cool for 5 minutes.
- Add eggs. Beat in the eggs one at a time until glossy and pipeable.
- Pipe. Pipe 10cm lengths through a star nozzle straight onto baking paper.
- Air fry. Cook at 375°F for 12 minutes until golden, then toss in the cinnamon sugar while hot.
Test-kitchen tip
Toss them in the sugar the second they come out. Once churros cool the sugar will not stick.
