Deeply browned burgers with a juicy middle, cooked indoors with no smoke.
The dimple in the middle is not a gimmick. Burgers puff as they cook, and a thumbprint keeps them flat instead of turning into meatballs.

Ingredients
Serves 4 · tap to check off
- 500g beef mince, 20% fat
- 1 tsp salt, plenty of black pepper
- 4 slices cheese, optional
- 4 burger buns and toppings
Method
- Shape. Form four patties slightly wider than your buns and press a dimple into the centre of each.
- Season. Salt both sides just before cooking, not earlier.
- Air fry. Cook at 390°F for 12 minutes, turning once.
- Melt. Add cheese for the final minute and toast the buns while they rest.
Test-kitchen tip
Do not press the patties while they cook. Every push squeezes out the fat that keeps them juicy.
