Domestic ovens cannot get hot enough for a proper base. An air fryer is small, so it holds fierce heat right against the dough, which is exactly what a crisp bottom needs.

- 1 pizza base, small enough to fit your basket
- 3 tbsp passata
- 1 ball mozzarella, torn
- Basil, olive oil and salt
- Toppings of your choice
Method
- Pre-crisp. Air fry the naked base at 400°F for 2 minutes so the bottom sets.
- Top. Spread the passata thinly, then add mozzarella and toppings. Do not overload it.
- Air fry. Cook at 400°F for 6 minutes until the cheese blisters.
- Finish. Basil and a drizzle of oil out of the basket.
Test-kitchen tip
Pre-crisping the bare base for 2 minutes is the whole trick. It stops the sauce soaking in and going soggy.
