Air fryer fish fillets

Crunchy golden crumb, flaky fish, and none of the oil or mess of deep-frying.

The trick with breaded fish in an air fryer is spraying the crumb with oil. Dry breadcrumbs stay pale and floury no matter how long you cook them; a light mist turns them properly golden.

Ingredients

Serves 2 · tap to check off

  • 2 white fish fillets, such as cod or haddock
  • 40g panko breadcrumbs
  • 1 egg, beaten
  • 2 tbsp plain flour
  • Oil spray, lemon wedges to serve

Method

  1. Set up. Line up three bowls: flour, beaten egg, then panko.
  2. Coat. Dip each fillet in flour, then egg, then press firmly into the panko.
  3. Spray. Mist both sides with oil. This is what turns the crumb golden.
  4. Air fry. Cook at 390°F for 12 minutes, turning once, until the crumb is deep gold and the fish flakes.
Test-kitchen tip

Spray the crumb, not the basket. Un-oiled panko will still be pale and raw-tasting after 15 minutes.
