Crisp edges, gooey middles, and a batch of six in nine minutes.
An air fryer is closer to a fan oven than a static one, so cookies spread faster and brown quicker. Lower and shorter than you think is the rule.

- 120g soft butter
- 100g brown sugar
- 1 egg
- 180g plain flour and 1/2 tsp bicarbonate of soda
- 150g chocolate chips
Method
- Cream. Beat the butter and sugar until pale, then beat in the egg.
- Fold. Fold in the flour, bicarb and chocolate chips.
- Portion. Roll 6 balls onto baking paper, spaced well apart.
- Air fry. Cook at 320°F for 9 minutes. They will look underdone and that is right.
Test-kitchen tip
Pull them looking underbaked. They firm up on the paper and that is what keeps the middle gooey.
