Brownies are all about underbaking. In an air fryer the top sets fast while the middle stays molten, which is exactly what you want.

Ingredients

- 120g butter
- 150g dark chocolate
- 150g caster sugar
- 2 eggs
- 80g plain flour and 2 tbsp cocoa
Method
- Melt. Melt the butter and chocolate together and cool slightly.
- Whisk. Whisk in the sugar, then the eggs, until glossy.
- Fold. Fold in the flour and cocoa and pour into a lined tin that fits your basket.
- Air fry. Cook at 320°F for 20 minutes. A skewer should come out with moist crumbs.
Test-kitchen tip
A clean skewer means you have gone too far. Pull them when it comes out with damp crumbs clinging on.
